Elaboration
- Mince the veal in a mincing machine
- Chop the onion and almonds into brunoise
- Grate the ginger over the onion
- Mix everything in a bowl and add salt, cumin and black pepper
- Add the panko and form the kofta
- In a bowl, mix the yogurt with the sambal sauce
Termination
- Cook the kofta in the oven at 180º
- Place the kofta on the plate and add the sambal and yogurt sauce on top
- Finish by sprinkling a little fresh coriander
