Elaboration
- Sauté the garlic and the lemon grass in the oil for one minute.
- Add the meat, the carrots and the chopped onion.
- Then, add the tomato paste and cook for five minutes.
- Next, add the water, the coconut milk, the star anise and the Chinese five spice.
- Leave the mix to boil on a medium low heat for one and half hours.
- Add the soy sauce and remove the star anise.
- Dice the meat and make raviolis with the Wonton pasta.
- Strain the broth and reduce until it reaches the consistency of a thick soup.
Termination
Heat the steamed ravioli and place them on the plate, sauce with the reduced broth and finish with Thai basil leaves and coriander leaves.
