INGREDIENTS

• 15 pcs Wonton pasta
• 500 gr beef shank
• 500 gr beef skirt steak
• 50 gr vegetable oil
• 1 lemongrass stem
• 4 cloves of garlic
• 1 onion
• 50 gr tomato paste
• 500 ml coconut milk
• 1 l water
• 1 pcs of star anise
• 5 gr of Chinese five spice
• 2 carrots
• 10 ml soy sauce
• 5 leaves of Thai basil
• Coriander leaves

Elaboration

  • Sauté the garlic and the lemon grass in the oil for one minute.
  • Add the meat, the carrots and the chopped onion.
  • Then, add the tomato paste and cook for five minutes.
  • Next, add the water, the coconut milk, the star anise and the Chinese five spice.
  • Leave the mix to boil on a medium low heat for one and half hours.
  • Add the soy sauce and remove the star anise.
  • Dice the meat and make raviolis with the Wonton pasta.
  • Strain the broth and reduce until it reaches the consistency of a thick soup.

Termination

Heat the steamed ravioli and place them on the plate, sauce with the reduced broth and finish with Thai basil leaves and coriander leaves.
