INGREDIENTS

ROAST:
• 4 pieces of beef shank
• 2 units of carrot
• 1 unit of onion
• 2 units of garlic
• 500 grams of achiote paste
• Salt
• Pepper
• Extra virgin olive oil (EVOO)

ROASTED GARLIC MAYONNAISE:
• 5 egg yolks
• 1 whole egg
• 1 head of garlic
• 1 tablespoon of mustard pinch of salt
• 1 tablespoon lemon juice
• 500 ml sunflower oil

Elaboration

ROAST:

Season the shank with salt and pepper. Coat with achiote paste and place on trays with carrots, onions and garlic. Roast in the oven at 140ºC for 3 hours.

When the time is up, remove from the oven, bone and shred. Put aside.

ROASTED GARLIC MAYONNAISE:

Roast the garlic. Make a mayonnaise and season with mustard, lemon and roasted garlic.
