INGREDIENTS

List of ingredients:
• 400 gr beef tenderloin

Marinade ingredients:
• 500 ml Oloroso Jerez wine
• 30 ml Perrins sauce
• 5 und. chopped anchovies
• 10 g chopped capers
• 15 g ketchup
• 15 g Dijon mustard
• 25 g chopped shallot
• 4 g curry
• 4 g salt
• 3 g black pepper
• ½ garlic clove
• 15 g lemon juice
• Grated orange rind
• 16 g cayenne powder

Sauce ingredients:
• 500 g butter
• 3 egg yolks
• 150g chicken stock

Elaboration

Marinade 

Mix all the ingredients until reaching a homogeneous mixture, and divide the prepared marinated into two halves.

Afterward, marinate 400 g of sirloin with half of the previously prepared marinade.

Sauce

For the remaining half of the prepared marinade, add 250 g of butter and 3 egg yolks and let the mixture settle.

To complete the preparation, mix 250 g of butter and 150 g of chicken stock, heat and pass everything through the blender.

Termination

Finish by pouring sauce on the sirloin and heating it one last minute in the oven.
