Preparation
Make black salt beef in few steps.
- We clean the meat by removing the fat and tendons.
- Black salt: Mix the powdered charcoal with the coarse salt. To make it more com- pact, we add an egg white.
- Roasting: We place a black salt base in a container; We cover the meat using the parts that had been previously removed. Then we cover it with the rest of salt, and bake it for 15 minutes at 200ºC.
- Plating: Cut the loin into thin slices and placed on a plate with black salt.
