INGREDIENTS

  • 1 piece of beef shank
  • 250 gr of bacon
  • 1 onion
  • 1 carrot
  • 2 cloves of garlic
  • 1/2 cup of cognac or brandy
  • 2 tablespoons of tomato concentrate
  • 750 gr of meat stock
  • 500 gr of red wine
  • 200 gr of mushrooms
  • 2 tablespoons of chopped parsley

Elaboration

  • Fry bacon at high temperature and in this fat, we’re going to brown garlic, onion, carrot and thyme
  • Add a bit of tomato paste and put the bacon from before back in
  • Add red wine and burn off the alcohol and add beef broth

Termination

  • Cook the beef in the oven for one hour with the broth, mushrooms, and shallots
