Elaboration
- Fry bacon at high temperature and in this fat, we’re going to brown garlic, onion, carrot and thyme
- Add a bit of tomato paste and put the bacon from before back in
- Add red wine and burn off the alcohol and add beef broth
Termination
- Cook the beef in the oven for one hour with the broth, mushrooms, and shallots
- Use the bone also as a support for plating
- Finish it with a little bit of juice on the side
